Shrimp Lo Mein

This recipe is a keeper. Easy to prepare and it tastes good, too. I subbed dried whole grain spaghetti for the fresh lo mein noodles, a bagged stir fry mix (broccoli, carrots and snow peas) for the broccoli and omitted the cashews. The entire clan loved it and at about 400 calories per serving it's destined to grace our dinner table again.

So do you mean you cooked the spaghetti then let it dry?

I followed the package directions for cooking the pasta, drained it and returned it to the pot with a little bit of canola oil to keep it from sticking.
