Menu Plan Monday - January 12, 2009


Hopefully, by the time you read this, I'm several pounds lighter. The healthy eating continues:

Monday - Honey-Pecan Pork Chops, Steamed Broccoli, Mashed Potatoes, Butternut Squash Soup

Tuesday - Spicy Chicken Stir Fry, Rice, Salad

Wednesday - Eat at Church - Mexican Chicken Casserole, Mac & Cheese, Lima Beans, Salad & a light dessert for those watching the weight (thanks, Tonya!)

Thursday - Grilled Bacon-Wrapped Petite Sirloin, Baked Potaotes (sweet potato for me), Cole Slaw

Friday - Vegetable Soup, Corn Muffins

Saturday - Wally's BD (we'll probably eat out later or have leftovers)

Sunday - leftovers

I like the sound of the spicy chicken stir fry. The peanuts would be a nice touch.

Great menu Barb! I just love Mexican chicken casserole. I just made it last week, and I'm already craving it again!
