Shrimp Lo Mein

This recipe is a keeper. Easy to prepare and it tastes good, too. I subbed dried whole grain spaghetti for the fresh lo mein noodles, a bagged stir fry mix (broccoli, carrots and snow peas) for the broccoli and omitted the cashews. The entire clan loved it and at about 400 calories per serving it's destined to grace our dinner table again.

Menu Plan Monday - February 23, 2009


We are having revival at church this week. That coupled with a baseball game on Thursday leaves me little time to prepare a meal. I'm so blessed to have a husband who doesn't mind kitchen duty!

Monday - meatloaf, mashed potatoes, green beans, cole slaw

Tuesday - shrimp lo mein, salad

Wednesday - FPSW - chicken & rice casserole, green beans, salad, dessert

Thursday - soup & sandwiches (homemade chicken salad) at the ball park

Friday - pork roast, mac and cheese, lady peas, corn muffins

Saturday - Mimi's Sticky Chicken, baked potatoes, salad

Sunday - leftovers

Menu Plan Monday - February 16, 2009

Another week, another menu! Baseball season starts this week, so we'll be eating some meals on the go....


Monday - steak & gravy, rice, english peas


Wednesday - FPSW Men's chili cook-off

Thursday - grilled tuna steaks, Asian veggie medley, rice

Friday - Baseball game - ham sandwiches & fruit (to go)

Saturday - Roasted chicken breasts, baked sweet potatoes, coleslaw

Sunday - leftovers

Menu Plan Monday - February 9, 2009



I missed posting last week because we had several obligations involving free food, so I only cooked two days! The downside is my scales reflect way too much cheesecake:( Due to the generosity of several of the hostesses this past week, I have some leftovers to use up. Here's the week!

Monday - shrimp stir fry (using leftover shrimp and marinated raw veggies), rice and fresh strawberries

Tuesday - hot dogs with onions & chili, potato salad (light version from leftover baked potatoes), raw carrots

Wednesday - FPSW: tamale pie, corn, pinto beans, salad, dessert

Thursday - crock pot BBQ, turnip greens, baked sweet potato

Friday - baked chicken, roasted potatoes, green beans, garlic bread (for the guys)

Saturday - supper club (here) -

Appetizer: cream cheese with roasted tomato relish & assorted crackers

Meal:cedar plank grilled salmon, wild rice, steamed vegetable medley, cheesecake bars (make double batch, see Sunday for link)

Sunday - my daughter's birthday lunch: Mrs. A's brown sugar ham, joe potatoes, dill coleslaw , green beans and cheesecake bars (made with Splenda & lowfat dairy) for dessert
