Menu Plan Monday - December 7


It's been a very long time between posts, but with the holidays upon us, a menu plan is a must!

Monday - I'll take chicken and dumplin's to M&Ms potluck. Making extra for the guys.



Tuesday - honey-pecan pork chops, mashed potatoes, salad



Wednesday - supper at church - baked chicken, sweet potato patties, green beans



Thursday - slammin' salmon burgers, oven fries, cole slaw



Friday - bubble pizza, salad

Menu Plan Monday - August 17, 2009


The first week of school went so smothly. I can't believe we only have 3 years left and then college! We also followed my menu plan (amazing). Here is how it looks for this week:

Monday - Meet the Indians at WHS....hot dog supper (love football!)

Tuesday -Golden baked pork cutlets, rice, steamed cabbage

Wednesday - Roast beef, mashed potatoes, lima beans, salad, rolls & dessert (at church)

Thursday - Sloppy joes, oven fries, salad

Friday - Supper Club at the Kilpatricks followed by the Fall Jamboree (love football!)

Menu Plan Monday - August 10, 2009


School begins this week! Along with the start of school will continue after school football practices and games beginning in late August. Since I last posted, I've discovered my husband will not be returning to the workplace, so he becomes the primary cook. We are slowly learning to be married without him working! Since weekends never work out for us, I am posting only for week days. The menu for this week includes:

Monday - fish tacos, guacamole salad, chips & salsa
Tuesday - Mimi's Sticky Chicken (thighs), pinto beans, turnip greens, corn muffins

Wednesday - Eat at church....Wednesday suppers are back! Herb Roasted Chicken, vegetable casserole, blackeyed peas, salad, bread, dessert

Thursday - Easy Bacon & Cheese Quiche, salad, fresh fruit

Menu Plan Monday - May 25, 2009


We adhered to last week's plan except for a few minor adjustments. The shrimp lo mein became marinara (sauce in the frig needed to be used) and soup became a simple salad. On Thursday we used up leftover beef from Monday. I can't wait for the fresh veggies from my garden! Until then, this is what we are eating:

Monday - grilled ribeyes, baked potatoes, salad, strawberry pie

Tuesday - lima beans (use recipe link but substitute dried limas for the pintos), steamed cabbage (thanks to a friend's bounty), cornbread

Wednesday - eat at church - beef strogannoff, green beans, salad

Thursday - wraps/sandwiches (ballgame at 6pm)

Friday - helping my sister move (ballgame at 8pm)

Saturday - moving day continues - crockpot lasagna, salad and bread

Sunday - grilled chicken salad

Menu Plan Monday - May 18, 2009


Last week was so stress-free in the meal department. I attribute that to my menu plan. Soon we will have fresh produce from our small garden and I'll incorporate that into our weekly menu. Here's what's cooking this week.

Tuesday - Brown Sugar Ham, Sweet Potatoes, Salad

Wednesday - Dinner at church (Sausage, peppers, onions - pinto beans or quiche - salad)

Menu Plan Monday - April 13, 2009


Hopefully with JV baseball winding down our lives will be a bit more manageable. We have a last game on the schedule for Monday but the forecast is calling for rain. So we may shift some of the meals around as the week unfolds.

Monday - Sandwiches & veggies with dip (if we play ball)
Shrimp marinara, steamed broccoli, bread (if we don't)
Tuesday - Baked ham & cheese omelet roll, pear salad, homemade hash browns (leftover ham)
Wednesday - Roast beef, mashed potatoes, green beans (at church)
Thursday - Fish tacos, salad, spanish rice
Friday - Grilled ribeyes, 2X baked potatoes, salad
Saturday - hope to visit my sister (we'll eat there)
Sunday - Buttermilk chicken, mashed potaotes, lady peas, cornbread, blueberry cobbler

Menu Plan Monday - March 30, 2009

Wow, it seems like I haven't posted in months! We have lots of ball games scheduled which means we either eat at the concession stand (very expensive & not healthy) or we pack a cooler with our dinner and snacks. We choose to take our food with us. Here's how it stacks up for the week. I may switch Tuesday and Friday menus......
Monday - Baseball games (wraps & fruit at the games)

Tuesday - Buttermilk chicken, mashed potatoes, salad

Wednesday - eat at church - Chicken alfredo, green beans, salad, dessert

This a busy week, but what week isn't? I will not post on the 16th due to Spring Break. We have a baseball tournament the beginning of the week and will be travelling the latter part.

Due to an extremely busy weekend, I am not posting a menu this week. I do have my plan written down (did it while riding in the car). I'm going back and picking up some of our favorite and easiest meals. Today is soup and sandwiches (ballgames) & tomorrow is Mimi's Sticky Chicken from last week. Have a great one:)

Shrimp Lo Mein

This recipe is a keeper. Easy to prepare and it tastes good, too. I subbed dried whole grain spaghetti for the fresh lo mein noodles, a bagged stir fry mix (broccoli, carrots and snow peas) for the broccoli and omitted the cashews. The entire clan loved it and at about 400 calories per serving it's destined to grace our dinner table again.

We are having revival at church this week. That coupled with a baseball game on Thursday leaves me little time to prepare a meal. I'm so blessed to have a husband who doesn't mind kitchen duty!

Monday - meatloaf, mashed potatoes, green beans, cole slaw

Wednesday - FPSW - chicken & rice casserole, green beans, salad, dessert

Menu Plan Monday - February 9, 2009



I missed posting last week because we had several obligations involving free food, so I only cooked two days! The downside is my scales reflect way too much cheesecake:( Due to the generosity of several of the hostesses this past week, I have some leftovers to use up. Here's the week!

Monday - shrimp stir fry (using leftover shrimp and marinated raw veggies), rice and fresh strawberries

Tuesday - hot dogs with onions & chili, potato salad (light version from leftover baked potatoes), raw carrots

Wednesday - FPSW: tamale pie, corn, pinto beans, salad, dessert

Thursday - crock pot BBQ, turnip greens, baked sweet potato

Friday - baked chicken, roasted potatoes, green beans, garlic bread (for the guys)

Saturday - supper club (here) -

Appetizer: cream cheese with roasted tomato relish & assorted crackers

Meal:cedar plank grilled salmon, wild rice, steamed vegetable medley, cheesecake bars (make double batch, see Sunday for link)

Sunday - my daughter's birthday lunch: Mrs. A's brown sugar ham, joe potatoes, dill coleslaw , green beans and cheesecake bars (made with Splenda & lowfat dairy) for dessert

Well, I saw a modest weight loss this week, but I will continue to practice portion control and exercise!

Wednesday - FPSW - chicken stir fry, fried rice, salad and dessert

Thursday - spaghetti with homemade sauce, green beans, easy muffins

Friday - supper club at the Bottigers (no cooking for me)

Saturday - spiced roasted chicken, potato salad (light version), steamed cabbage

Sunday - meatloaf, macaroni & cheese, lady peas, corn muffins

Thursday - Grilled Bacon-Wrapped Petite Sirloin, Baked Potaotes (sweet potato for me), Cole Slaw

Well, the New Year has arrived and I wish only good things for you and yours. As you look over my menu plan for the week you will see lighter foods with more fruits and veggies. I have this pesky 20 pounds hanging around that must depart. So, here's how the meal plan stacks up for this first full week of 2009!
